A story of family and attachment to the land
The Domaine Lou Gaillot traces its roots back to 1830, when Pierre Cassant settled on the land of the place called "Gaillot" to create a mixed farming and livestock farm.

In 1860, his son succeeded him, then in 1890, Émile Cassant took over the farm and had the current farmhouse built. Wheat, plum trees, vines and cattle breeding then structured the life of the farm.

In 1920, Marie-Agnès Cassant married André Pons and continued the family tradition on the Gaillots land.

The birth of Lou Gaillot
In 1960, Jean-Claude Pons took over the farm and gradually shifted its focus towards plum and grape cultivation. Until 1985, the wine was sold in bulk. Two years later, Jean-Claude decided to market his own bottles under the name Lou Gaillot., ""Lou"" meaning ""the"" in Occitan, and ""Gaillot"" recalling the place name.

A skill passed down with passion
Today, Gilles Pons, a trained oenologist, manages the family estate with passion and exacting standards. Each vintage reflects the alliance of family tradition, respect for the terroir, and oenological excellence, perpetuating nearly two centuries of history and expertise.
